Japanese Style Bunka Kitchen Knife High Carbon 180mm
This is a K-tip rendition of the bunka style kitchen knife in .84% high carbon steel. The blade has been quenched with a subtle clay induced pattern down the spine similar to the hamon formed in water hardening steels. The 150mm handle of polished gidgee wood and buffalo horn leads to a 180mm blade ground with a high even bevel. This is a multi purpose blade and its height will serve well in chopping applications on fruits or vegetables. The distal taper helps lighten the blade so that it will move easily with the hand.
As this is a carbon steel blade care should be taken to clean and dry the blade after use. Application of a food grade oil will also help preserve the steel. Over time the steel will take a beautiful dark patina if cared for correctly.
