How to hold a whetstone or waterstone for knife sharpening? When using the my sharpening stones you should keep them wet so that you have a slurry formed on the stone that does not dry out. When sharpening kitchen knives it is important that the whetstone remains wet so that the steel being removed from the blade does not cling to the surface of the stone. This will result in clogging. The easy way to sharpen your knife and keep the stone wet is a stone holder. These will secure the stone so that the water does not lead to slipping all over your work surface. The whetstone holder or stone saddle can also be used as a bridge over a tray of water. This makes it easy to reapply water to the surface of the stone with your hand but also catches the drips from the stone.
