This elegant gyuto style kitchen knife has been hand crafted from 52100 high carbon tool steel. This steel used for ball bearings elsewhere is renowned for its wear resistance and fine grain structure amounting to a brilliant carbon steel for kitchen use. The 140mm octagonal handle leads to a 240mm blade ground with a high even bevel. The gyuto blade can be a staple in any kitchen and will excel at cutting soft material such as boneless meat and deseeded fruits or vegetables. The distal taper helps lighten the blade so that it will move easily with the hand.

Comes razor sharp
Care must be taken to clean and dry knife after use and not leave submerged in dish water or put in dish washer. This is a carbon steel blade and will patina over time.
Accurately heat treated in a kiln, quenched & tempered.
Must be cleaned and dried before storage, not safe for dishwasher
