This 220mm ( 8.5") blade was forged in my workshop from 5/32" 52100 bar stock. 52100 is a steel renowned for its super fine grain structure that is a favorite among western blade smiths for carbon steel cutlery.
This kitchen knife has been ground very fine. Great for slicing soft meats and vegetables. Blade is ground evenly on both sides so it can be used by either left handed or right handed cooks. I love working with 52100 steel, commonly used for ball bearings so it is famously wear resistant, I am sure you will love using it.
Bring an authentic feel to your kitchen with a hand forged carbon steel blade. The satin finish of the blade will allow a dark patina to develop over time adding to it's old world feel. Care should be taken to clean and dry the knife after it has been used. Quality knives should never go in the dish washer, please hand wash in warm water. If being stored for a longer period of time apply a little clean cooking oil to preserve the blade.
